When heated with proteins, GOS undergoes the Maillard reaction, making it suitable for specialty food processing, such as in bread and pastry production.
As a premium prebiotic, GOS promotes bifidobacteria growth and offers the typical benefits of oligosaccharides. It features a mild, pure sweetness—only 30-40% of sucrose’s sweetness—with low caloric value and excellent moisture retention. Under neutral pH conditions, GOS exhibits high thermal stability, remaining intact even after heating at 100°C for 1 hour or 120°C for 30 minutes.
