Polydextrose is a water-soluble dietary fiber composed of randomly cross-linked glucose polymers, along with small amounts of sorbitol and citric acid, produced through high-temperature melt polycondensation. It appears as a white or nearly white solid powder with 70% water solubility. Its 10% aqueous solution has a pH of 2.5–7.0, and it has a neutral taste with no distinct flavor. As a functional food ingredient, it effectively supplements the body’s need for water-soluble dietary fiber.
