- FOS has delicate taste, improving product flavor
- FOS has good moisturizing, increasing product crispness
Fructooligosaccharide (FOS) is a type of oligosaccharide composed of fructose units linked together with a small number of glucose units at the end. It is a prebiotic fiber that has gained significant attention in the field of nutrition and health due to its unique properties and potential health benefits.
Structure and Sources
FOS typically consists of short chains of fructose molecules, usually 2 to 10 units long. The most common forms are 1-kestose (GF2), nystose (GF3), and fructofuranosylnystose (GF4). These compounds can be naturally found in a variety of plants, such as chicory root, Jerusalem artichoke, garlic, onion, and asparagus. They can also be produced industrially through enzymatic synthesis from sucrose or extracted from natural sources.
